📌 Key Responsibilities

• Lead all pastry and bakery production for hotel restaurants, banqueting, buffet dessert stations, and room service.
• Create and develop pastry menus, signature desserts, seasonal specials, and wedding and event cakes.
• Manage pastry section mise en place, production scheduling, and team supervision for efficient daily output.
• Produce artisan breads, viennoiseries, petit fours, and confectionery for hotel breakfast and F&B outlets.
• Execute chocolate work, sugar sculptures, and decorative dessert presentations for special events and VIP guests.
• Control pastry ingredient costs, manage daily requisitions, and minimise wastage through efficient production planning.
• Ensure FSSAI hygiene standards, temperature controls, and allergy labelling compliance for all pastry products.

🎓 Qualifications and Requirements

• Diploma in Culinary Arts with pastry and bakery specialisation from an IHM-affiliated or recognised culinary institute.
• 3 to 8 years of pastry experience in a hotel, patisserie, or upscale restaurant with a dedicated pastry section.
• Advanced skills in classic and contemporary dessert production, plated dessert presentation, and artisan bread baking.
• Proficiency in chocolate work, sugar techniques, and decorative confectionery for hotel buffets and events.
• Creativity and passion for pastry innovation with a portfolio of signature desserts and seasonal menu contributions.
• Knowledge of pastry food costing, production planning, and section management in a hotel kitchen environment.
• FSSAI food safety and hygiene knowledge applicable to pastry, bakery, and cold preparation sections.
• Good Tamil and English communication skills for team coordination and client interaction in Chennai.
