Jobzi is sourcing qualified candidates for Biryani / South Indian Specialist Cook positions in Coimbatore's private Restaurant Chain sector. 📌 Key Responsibilities

• Cook authentic biryani varieties using dum method with correct rice-to-meat ratios and aromatic spice blends.
• Prepare full South Indian breakfast menu including idli, dosa, pongal, upma, and sambar consistently to quality standards.
• Make gravies, rasam, and side dishes that accompany both biryani and South Indian rice meals.
• Prepare and ferment idli and dosa batter in correct proportions and manage batter stock to meet daily demand.
• Grind fresh masala pastes and dry spice blends as required for South Indian curries and biryani masala.
• Manage rice cooking for high-volume service including basmati for biryani and par-boiled varieties for South Indian meals.
• Maintain the South Indian or biryani station, coordinate with kitchen helpers, and ensure zero waste from mis en place.

🎓 Qualifications and Requirements

• 12th pass minimum with demonstrated specialisation in South Indian cuisine or biryani cooking.
• Two to six years of experience in a restaurant or catering kitchen specialising in South Indian or biryani formats.
• Deep knowledge of regional South Indian cuisine across Tamil Nadu, Andhra, and Kerala styles is valued.
• Expertise in dum biryani techniques including sealing, cooking time control, and layering of rice and protein.
• Proficiency in preparing South Indian breakfast items at high speed and volume during peak morning service.
• Ability to manage large quantities of rice, batter, and gravies efficiently with minimal wastage.
• Knowledge of FSSAI food safety practices relevant to high-volume cooking and proper storage of cooked items.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
