📌 Key Responsibilities

• Cook South Indian and North Indian food items in large batches for industrial canteen service covering hundreds to thousands of covers per meal.
• Prepare bulk curries, dals, sambar, rasam, and rice dishes to consistent taste and texture standards for daily canteen menus.
• Operate large commercial cooking equipment including bulk cookers, steam kettles, and tilting pans safely and correctly.
• Follow standardised production schedules and meal plan timings to ensure food is ready on time for canteen service windows.
• Monitor food temperature before service and ensure all cooked items meet FSSAI minimum holding temperature requirements.
• Coordinate with the kitchen helper team to ensure timely availability of prepared ingredients and mise en place for bulk cooking.
• Maintain personal hygiene and workstation cleanliness at all times in compliance with the catering company food safety SOP.

🎓 Qualifications and Requirements

• 12th pass or Diploma in Hotel Management from a recognised catering institute with bulk production kitchen experience.
• One to four years of hands-on experience in an industrial catering kitchen, institutional kitchen, or hotel production kitchen.
• Proficiency in cooking South Indian and North Indian cuisine in large-batch formats for canteen or mess-style service.
• Ability to operate commercial bulk cooking equipment including steam kettles, large-capacity cookers, and tilting pans.
• Knowledge of FSSAI food safety guidelines including temperature management for bulk cooked items.
• Physical ability to manage long production shifts in high-temperature bulk cooking kitchen environments.
• Good teamwork and communication with fellow cooks, helpers, and supervisors in a production kitchen setting.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
