📌 Key Responsibilities

• Lead the production kitchen team for an industrial or institutional catering site and plan daily meal production schedules.
• Standardise bulk recipes and train junior cooks and helpers on correct preparation techniques and quantity ratios.
• Oversee all cooking sections to ensure food quality, taste consistency, and on-time delivery for each meal service window.
• Monitor ingredient usage, control wastage, and coordinate with the store executive on daily raw material requirements.
• Conduct pre-service quality checks on all cooked items before they are dispatched to the canteen or service counter.
• Ensure full FSSAI and HACCP compliance in the production kitchen including temperature records and hygiene audits.
• Prepare daily production reports and communicate any operational issues or staffing gaps to the site catering manager.

🎓 Qualifications and Requirements

• Diploma in Hotel Management or equivalent catering qualification from a recognised institution.
• Three to eight years of progressive catering kitchen experience with at least two years leading a production team.
• Demonstrated ability to manage bulk cooking production for a catering site serving 300 or more covers per meal.
• Strong knowledge of FSSAI food safety requirements and HACCP principles relevant to industrial catering operations.
• Experience in planning and executing daily menu cycles for corporate, factory, or institutional catering contracts.
• Leadership skills to supervise junior cooks and helpers and maintain kitchen discipline and hygiene standards.
• Ability to manage raw material consumption reports and contribute to cost control targets set by the catering company.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
