📌 Key Responsibilities

• Prepare a full range of bakery and pastry items including cakes, tarts, pastries, croissants, and artisan breads.
• Produce hot and cold plated desserts for restaurant service following standardised recipes and presentation specifications.
• Temper chocolate and prepare chocolate-based confections, truffles, and dessert elements for plating and display.
• Manage proofing, baking, and cooling schedules for bread and pastry items to meet daily service timelines.
• Maintain accurate records of bakery ingredient stock, monitor shelf life of perishables, and minimise wastage.
• Prepare mousses, cremeux, ganaches, and gel inserts for composite desserts served in the restaurant.
• Develop new dessert specials with the head chef and test recipes to ensure consistent replication at batch scale.

🎓 Qualifications and Requirements

• Diploma in food production, baking, or patisserie from a recognised hotel management or catering institute.
• One to five years of hands-on pastry and bakery experience in a restaurant, hotel, or standalone bakery.
• Proficiency in both hot and cold dessert preparation including plated desserts, cakes, and artisan breads.
• Knowledge of chocolate tempering, sugar work, and assembly of multi-component composed desserts.
• Understanding of baking science including yeast fermentation, gluten development, and temperature sensitivity.
• Attention to detail and precision required for consistent scaling, timing, and presentation of pastry items.
• FSSAI food safety knowledge with particular awareness of allergen management in bakery and dessert production.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
