📋 Job Description

📌 Key Responsibilities

• Lead a designated kitchen section independently during full service, managing junior cooks and helpers on the station.
• Standardise and document recipes for section dishes and train team members on correct preparation procedures.
• Coordinate with the sous chef and head chef for daily specials, menu changes, and ingredient procurement needs.
• Conduct daily quality checks on raw ingredients, mis en place, and finished dishes before and during service.
• Monitor portion sizes, plating presentation, and taste consistency to maintain brand quality across all covers.
• Manage station-level stock, track daily consumption, and minimise wastage through efficient planning and rotation.
• Train commis cooks and kitchen helpers attached to the section, reporting their performance to the sous chef.

🎓 Qualifications and Requirements

• Diploma in food production or hotel management from a recognised catering institution is required.
• Three to seven years of hands-on kitchen experience including at least two years leading a cooking station.
• Expertise in one or more cuisine categories with the ability to maintain consistency across high-volume service.
• Demonstrated ability to manage junior kitchen staff, coordinate section activities, and meet service timelines.
• Solid understanding of FSSAI food safety regulations, temperature management, and kitchen hygiene audits.
• Ability to assist the sous chef with menu planning, recipe standardisation, and seasonal ingredient sourcing.
• Good spoken communication to coordinate with kitchen and service teams during high-pressure peak service periods.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
