📋 Job Description

Jobzi is sourcing qualified candidates for Sous Chef positions in Coimbatore's private Restaurant Chain sector. 📌 Key Responsibilities

• Deputise for the head chef and manage full kitchen brigade operations during assigned shifts and on head chef leave.
• Oversee all cooking sections to ensure consistent quality, correct portioning, and on-time service delivery.
• Develop and standardise recipes, train cooks on correct execution, and audit output during service for compliance.
• Manage daily food cost monitoring, approve requisitions, control wastage, and report variances to the head chef.
• Create weekly kitchen staff schedules ensuring adequate cover for all sections across breakfast, lunch, and dinner shifts.
• Coordinate with vendors and the purchasing team for ingredient quality, delivery schedules, and price negotiations.
• Conduct kitchen hygiene and food safety audits and ensure all sections comply with FSSAI and brand standards.

🎓 Qualifications and Requirements

• Hotel Management degree or diploma from a recognised institution with multi-cuisine kitchen management experience.
• Five to twelve years of progressive kitchen experience with at least two years in a sous chef or senior chef role.
• Demonstrated ability to manage a kitchen brigade of ten or more staff across multiple cooking sections.
• Strong food cost management skills with ability to analyse consumption reports and identify variance causes.
• Deep culinary knowledge across at least two cuisine types with the ability to develop and standardise new recipes.
• Excellent leadership and communication skills to manage diverse kitchen teams including cooks, helpers, and stewards.
• FoSTaC food safety certification mandatory; knowledge of HACCP kitchen management systems strongly preferred.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
