📌 Key Responsibilities

• Operate gas and charcoal tandoor ovens safely and maintain correct operating temperatures throughout the service shift.
• Prepare marinated kebab and tikka items to standardised recipes including correct marination time and seasoning levels.
• Make various tandoor breads including naan, roti, kulcha, and paratha to correct texture and char specifications.
• Manage raw material requirements for the tandoor section including dough, marinated proteins, and spice blends.
• Maintain cleanliness of the tandoor station including the oven interior, surrounding counters, and utensils.
• Monitor consistency of char, colour, and internal temperature for all tandoor items before plating or service dispatch.
• Train kitchen helpers on safe handling of tandoor equipment and assist in developing new tandoor menu items.

🎓 Qualifications and Requirements

• 12th pass minimum; catering or food production certificate with specific tandoor training is preferred.
• Two to six years of dedicated tandoor cooking experience in a restaurant or hotel kitchen environment.
• Proficiency in operating both gas and charcoal tandoor ovens with knowledge of temperature regulation techniques.
• Expertise in preparing a full range of tandoor items including breads, kebabs, tikkas, and whole marinated proteins.
• Knowledge of marination science including spice ratios, tenderising agents, and optimal marination durations.
• Commitment to food safety at high-heat cooking stations including burn prevention and fire safety awareness.
• Ability to handle volume production consistently during busy dinner and weekend service periods.
• Good Tamil and English communication skills for team coordination and client interaction in Coimbatore.
